Leslie’s Chicken Cannelloni with Roasted Red Bell Pepper Sauce

1 8oz. package Cannelloni or manicotti shells
4 Cups finely chopped cooked chicken
2 (8oz) contaners chive-and-onion cream cheese
1 (10oz) package frozen chopped spinach, thawed and well drained
1 Cup Mozzarella (or more!)
1/2 Cup Italian-seasoned breadcrumbs

3/4 tsp. garlic salt
1 tsp. pepper
Roasted Bell Pepper Sauce (or just a Red Bell Pepper sauce)

Directions:
COOK pasta, drain, set aside
STIR chicken with next 6 ingredients in large bowl
CUT 1 side of pasta length wise (for easier stuffing)
SPOON in chicken mix into each shell, gently pressing cut sides together.  Place shell seam side down in lightly greased baking dish.(2, 11X7 inch)
POUR Red Pepper Sauce evenly over shells
BAKE covered at 350 for 25-30 min.
